A Lovely Granby, Colorado Wedding Shared with The Charity Wedding

I’m so excited about one of today’s weddings.  When Kerinsa Mullins of Kerinsa Marie Photography sent in this gorgeous wedding in Granby, Colorado, I knew right away I would feature it.  Then I received an email from one of my favorite fellow bloggers, Alicia from The Charity Wedding, asking if I would like to team up with her and post the wedding together.  “Of course”, I said.  And so here we have it, with each of us posting a different part of the wedding so if you visit her site and then mine, you will see the whole story.  Alicia has posted the “Pre-ceremony and ceremony” images and I have the reception here below.  So let’s check them out.  And if you haven’t seen Alicia’s post, be sure to check it out as well.  The Charity Wedding, Wedding Wednesday: A Colorado Wedding.

A Wonderful Detail Filled Wedding in New Brunswick, Canada

Today is definitely Wedding Wednesday as I’m posting two wedding’s instead of one.  And here’s the lovely second one sent in by fabulous photographer Kandise Brown of hibou photo.  She also was kind enough to share a few words with us about bride and groom Courtney and Andrew, so let’s hear what she had to say.

Courtney & Andrew had a beautiful outdoors wedding full of personal touches, from the custom made dresses to the activity booklet they created for their young guests. The centrepieces were focused on bottles that the bride & her sister had spent years picking out of the fields around their family farm, which was also the site of the wedding. From creating a bar out of the granary to a fabulous photo booth wall, no detail was overlooked. The community pitched in to make everything happen, including self-catering and the high school students who volunteered to act as servers for the event. Chicken with a White Wine & Tarrgon Cream Sauce in a Slow-Cooker

Do you like slow-cooker recipes?  I do…they’re amazing, just chop, brown and add…and several hours later you have a fantastic meal that will satisfy even the hungriest of your clan.  And this one will be sure to please.

Ingredients

6 bone-in, skin-on chicken breasts, (10 to 12 ounces each)

2 tablespoons vegetable oil

1  1/4 pounds crimini mushrooms, quartered ( if you can’t find criminis, substitute with mini portobellos)

1 onion, diced

4 cloves garlic, minced

1  3/4 cup dry white wine

1 cup low-sodium chicken broth

1 tablespoon minced fresh thyme or 1 teaspoon dried

2 bay leaves

1 pound carrots, peeled and cut on the diagonal

 

Sauce

1/4 cup all-purpose flour

1 cup heavy cream

1/4 cup minced fresh tarragon

1 tablespoon fresh lemon juice

 

 

1.  Mince garlic.

 

 

2.  Dice onion.  FYI…I have a method for this which I was taught by, believe it or not of all people, my Step Father years ago when I was a little girl.  And I’ve been dicing this way ever since.  Simply take the onion and cut it in sections on one side.

 

 

Then slice in the same fashion on the next side.

 

 

Now flip the onion and cut vertically through the cris-cross horizontal cuts you just made.

 

 

This makes for some beautifully even cut dices.

 

 

3.  Cut crimini mushrooms into quarters.

 

 

4.  Cut peeled carrots into diagonal slices.

 

 

4.  Prep chicken breast by sprinkling with pepper and salt.  (FYI…salt is important here so don’t under-do it.)

 

 

6.  Add vegetable oil to 12 inch frying pan and brown each side of 3 chicken breast for about 5 minutes.  Once complete, repeat with other 3 breasts and place them into the slow-cooker.

 

 

7.  Add mushrooms and onion, (sorry Julia Child, my mushrooms do not have as much room as I’m sure you would like.  I will try harder next time.  For those of you who want to make mushrooms the proper way, divide this amount in half and cook 2 batches instead of one.)  Julia will be very happy!

 

 

Add minced garlic.

 

 

8.  Add dry white wine and scrape any browned bits into mixture.  Simmer until reduced by half, about 5 minutes.

 

 

9.  Poor mushroom mixture into slow cooker with chicken.

 

 

10.  Add broth, Thyme and Bay leaves to slow cooker.

 

 

11.  Add carrots, nestling them into the outer regions of the cooker.

 

 

12.  Cover and cook on low for 4 hours or until chicken is tender.  (Do not leave chicken in slow-cooker for longer than recommended time.)

 

 

13.  Mince fresh Tarragon.

 

 

14.  After cooking for 4 hours, transfer chicken to a large serving dish and remove the bay leaves from the slow-cooker.

 

 

15.  Whisk the flour with the cream until smooth.

 

 

16.  Add to vegetables in slow-cooker, turn on high, cover and cook until the sauce is thickened, about 30 minutes.

 

 

17.  Stir in the fresh minced Tarragon, lemon juice and season to taste with salt and pepper.  Then spoon some of the sauce with vegetables over chicken and serve.

 

 

And there you have it…mmm, mmm, good!

Atlanta, 5 Seasons Brewing & A Wedding

As soon a I saw Jesse & Paul’s wedding submitted by Jessica Ashley of Peachtree Photography, I knew I had to feature it.  I mean, not only are there some stunning images…but a wedding at a brewery?  Seriously that has to be next to perfect!  And if The Hubby and I weren’t already married, I’m sure there’d be little convincing to get him to fly out to Atlanta and have a wedding right there at 5 Seasons Brewing…since we both love us some beer and awesome breweries like this.  At the very least I definitely want to go visit it the next time we’re in that amazingly fun town.  And if by chance you live there are looking for a place to have your wedding, I’d definitely take a look at this place…such a unique venue for a wedding!

A Lovely Garden Wedding For “The Office” Couple in Franklin, Tennessee

This lovely wedding sent in by Joe & Rhonda Hendricks of Joe Hendricks Photography came in over this past weekend and I knew I just had to feature it right away.  So instead of publishing it months from now, I’m bringing it to you today as my second post of the day.  And even better…Joe and Rhonda provided us with a nice detailed account of the bride and groom and their special day.  So let’s waste no time and get right to it.

Jennifer & Mike are a fun, quirky couple – and they brought elements of their personalities into their wedding.  The first thing that comes to mind… a drawing of characters Jim & Pam from “The Office” in front of their wedding cake. You see, Jenn & Mike met at *their* office & are big fans of the TV show. The bride wore her favorite cowboy boots under her dress, and loved showing them off all day! Their candy bar was Jen’s favorite part, featuring their fave treats! It was a smaller-scale, garden wedding with no wedding party, but many dear friends & family attending.  The springtime affair was balanced out with soft orange, green & yellow accents throughout, including her stunning tulip bouquet.  Another unique touch was their *authentic* Hatch Show Print invitations & posters/guest favors; Hatch Show Print is a big deal in the South. Their venue was unique; a historical, former home with a “garden” back yard, with amazing trees, ceremony gazebo, candlelit stone patio and even ponds with trickling fountains. The home’s “man cave” basement/wine cellar is the perfect hangout spot for the guys! The outdoor pavilion with string lights & “pinlights” on each table housed the dinner, band, dance floor and bar, as bluegrass music filled the air. It was a sweet wedding, full of fellowship, in a fantastic, beautiful setting!

A Sunny Engagement Session in San Juan Capistrano California

About a month or so ago I began to request for all engagement submissions to have at least one outfit change for more variety in the blog’s imagery.  And although this adorable engagement session of Mia and Tim from San Juan Capistrano, California sent in by Kelly Mendoza of True Bliss Photography was submitted before I changed my requirements, I think these images are special enough to make them stand out even with the one outfit.  I just love how these two really play to the camera.  And that bouquet from Pixies Petals, simply gorgeous!  So go on then…have a look see and enjoy!
