1 1/2 cups Cake Flour
1 1/2 tsp Baking Powder
1/4 tsp salt
1 stick of butter at room temp
1 cup of sugar
1/2 tsp Vanilla
1/2 cup milk
1 egg and 1 yolk
juice of 1 lemon
1/2 stick of butter
1/2 cup sugar
For meringue frosting
5 Tablespoons water
1/4 tsp Cream of Tarter
1 1/3 cups sugar
2 egg whites
1 Tablespoon light Corn Syrup
1 tsp Vanilla
Step 1: Gather ingredients and preheat oven to 400 degrees.
Step 2: Mix flour, baking powder and salt in mixer. Beat in butter gradually. Beat in sugar and mix thoroughly. Beat in eggs, then vanilla and Milk. Beat until mixed.
Step 3: Pour into lined or non-stick cupcake pan.
Step 5: Bake at 400 degrees for 20 minutes or until inserted toothpick comes out clean.
Step 6: For lemon filling: Beat egg and yolk in double boiler or metal bowl set in simmering water. Beat in lemon, butter and sugar. Stir over medium heat until the mixture has the consistency of pudding.
Step 7: For meringue: Beat together water, Cream of Tarter, sugar, egg and syrup at low speed in double boiler or metal boil set in simmering water. When mixture reaches 140 degrees, beat on high for 5 minutes. Remove from heat, add vanilla and beat for 3 more minutes.
Step 8: Use something small and round like this shot glass to remove part of the center of each cupcake.
Step 9: Fill the center of each cupcake with lemon filling.
Step 10: Top off with meringue frosting.
