Banana Nut Cupcakes with Strawberry Filling & Peanut Butter Frosting

It is The Hubby’s birthday today! And each year on this day he asks me to bake him something sweet. This year this was the request…banana nut cupcakes with strawberry filling and peanut butter frosting! It’s like a peanut butter, banana and jelly sandwich all rolled into one super yummy cupcake! This is a definite winner in the cupcake department for sure!

Happy birthday baby! I hope this year ahead is the best we’ve had yet :-)


For cupcakes

3 cups all-purpose flour

2 cups granulated sugar

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

6 bananas mashed 

1 1/2 tsp vanilla extract

3/4 cup of vegetable oil

3 beaten eggs

2 cups chopped walnuts


For strawberry filling

2 cups fresh strawberries, pureed

1/3 cup granulated sugar

3 tablespoons cornstarch

1 teaspoon lemon juice


For Peanut Butter Frosting

1/2 cup butter

1 cup creamy peanut butter

2 cups confectioners’ sugar

1/2 cup cream


Step 1:  Make the strawberry filling by pureeing the strawberries. Then add the sugar, cornstarch and lemon juice. Heat and stir until mixture boils and thickens, about 5 minutes. Cool completely. Refrigerate until ready to use.

Step 2:  Preheat oven to 350 F. Mash the bananas or use a food processor to get them completely blended. Let them sit while you combine the dry ingredients.

Step 3:  Combine dry ingredients in a separate bowl.

Step 4:  In another separate bowl, mix the 3 beaten eggs, the vanilla extract, and the oil.

Step 5:  Add the oil, egg, vanilla mixture into your dry ingredients, just enough to get all of your dry ingredients wet.

Step 6:  Now add your mashed bananas and walnuts.

Step 7:  Pour your batter into muffin cups, filling them about 3/4 full. You should get at least 24 cupcakes out of this recipe.

Step 8:  Bake cupcakes for 20-25 minutes, or until a toothpick comes out clean.

Step 9:  Scoop out holes in your cupcakes to fill with strawberry filling.

Step 9:  Make frosting by mixing butter and peanut butter together until light and fluffy. Add powdered sugar and cream until you get your desired texture.
